Carrot Cake Oatmeal Cookies, gluten-free and vegan!

While the weather is getting warmer here in Toronto, we are seeing more wild bunny sightings in our backyard! With the stash of carrots in my fridge, I was feeling like making carrot cake goodies. Hence, that brought me to a baking substitute adventure!!⁠

Searching for the perfect gluten-free carrot cookie recipe!

Doubting if my rice and starch-based 1-to-1 gluten-free baking flour got at Bulk Barn Foods can make anything airy fluffy, I turned to an oatmeal carrot cookie recipe by @crunchycreamysweet !

I have adapted the recipe to be gluten-free, egg-free and dairy-free. All the ingredients needed for substitution are coconut oil, ground flaxseed and 1-to-1 gluten-free baking flour!

How to shape the carrot cake oatmeal cookies?

From my experiment, this cookie dough is flexible enough to roll into balls then flatten on cookie sheet. Alternatively, it is sturdy enough that you can roll it into a log. From there you can refrigerate for 30 mins or freeze for 5-10 mins, then cut the log into cookies!

Ingredients

  • 1.5 cup Gluten-free oats
  • 1 cup 1-to-1 Gluten-free baking flour
  • 3/4 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp Ground cinnamon
  • 1/2 tsp Ground nutmeg
  • 1/2 tsp Fine sea salt
  • 1/2 cup Coconut oil melted and cooled
  • 1/2 cup Brown sugar packed
  • 1 tsp Ground flaxseed + 2 tbsp filtered water
  • 1 cup Carrots shredded
  • 1/2 tsp Vanilla
