Growing up with papaya snow fungus!
This papaya snow fungus sweet soup is one of my favorites from my mom’s kitchen. It has the creaminess of boiled papaya, along with fleshy, sometimes crunchiness from the snow fungus.
Snow fungus is such versatile ingredient for other dessert recipes like the following too!
The papaya snow fungus combo is found in savory cooking too! Such recipe usually made with unripe (like green!) papaya. It serves as a base for savory soup with lean pork. I would say I would prefer it prepared as dessert than a savory soup, the combo just feels odd to me! (affiliate links below)
Do I need ripe papaya for this recipe?
The answer is no but of course preferred!
Unripe papaya at an uneven yellow-green stage can also be good for this recipe. The hard flesh of an half ripe papaya will be softened during the boiling process. Bonus the smaller you dice the papaya, the faster it boils down!
The bitterness of a half-ripe papaya will also be lessened through boiling. Of course the final sweet touch with honey or syrup is essential!
What is snow fungus and what are the benefits?
Snow fungus are also called white fungus. It is known for its moisturizing and soothing properties. Rich in plant-based collagen, it is often recommended for improving dry skin conditions. You can find snow fungus sold in dry half-dome form in Chinese grocery stores and Chinese herb stores. (affiliate links below)
